Beloved Italian Chef returns to Houston after a brief sabbatical
After a brief sabbatical, Chef Roberto Crescini returns to Houston after receiving “an offer he couldn’t refuse” from renown Houston restauranteur Francisco “Paco” Calza of the Houston classic BCN Taste & Tradition. The two met a few years ago during Crescini’s stint at Fresco Café Italiano. Crescini and Calza formed a strong friendship over a bowl of linguini or as Calza describes “the best pasta he’d ever eaten”. Repeat visits and conversations centered around their shared passion for high quality European ingredients eventually led the two to dream of collaborating if the opportunity arose. When Paco learned that Roberto was leaving Houston, he realized it was probably his only opportunity to work with the world-class Italian chef. Davanti, Italian for “front or forward” refers to the next chapter for Crescini and Calza.
With over 45 years of experience, Chef Roberto Crescini, originally from Gavardo in Lombardy, started cooking at the age of 14 and trained at the Caterina Medici Institute of Culinary Professionals in Gardone Riviera on Lake Garda. He is recognized by the American Chef Association as a Certified Italian Master Chef and is also a certified salumi maker and taster. He first arrived in Houston in 2015 and served as opening chef of Enoteca Rossa.
The counter-service concept will serve traditional Italian breakfast, lunch, and dinner along with takeout. The restaurant seats 60 guests with an additional 20 patio seats. Beverages on offer will include a selection of Italian wines and both European and domestic craft beer. Expect Crescini to do what he does best: scratch-made pasta that can be customized with proteins and sauces, pizzas, and homemade desserts like his classic tiramisu. Expect Calza to do what he does best: “we will work to have a warm, courteous, and efficient service. While at the same time offer the best beer and wine pairings for Roberto’s cuisine”.
